Chutney or Ambal



Kancha Amer Chutney/ Chutney with unripe green mangoes



- Green mangoes- 1 kg
- Sugar- 700 gms
- Mustard seeds- 15 gms
- Salt- 1 teaspoon
- Turmeric- ½ teaspoon
- Standard flour- 2 teaspoon
- Sultanas- 25 gms
- Cooking oil- 1 tablespoon


Peel the mangoes and cut them into ½ inch pieces. Now add the mango pieces in a pan and add water sufficient to cover the mangoes in the pan. Add turmeric powder and ½ teaspoon of salt to the pan and allow it to boil until the mangoes are cooked. Strain the water away.
Add the sugar and 1 cup of water in a round-bottomed pan and allow them to boil to a syrup. Once the syrup is a bit thick add the cooked mango pieces, sultanas and ½ teaspoon of salt. Boil it for 5 minutes. Now in ½ cup of water mix the flour(there shouldnt be any lumps) and add it to the pan. Allow it to boil until it thickens.
Now heat the oil in a seperate pan and add the Mustard seeds to the hot oil. Once the Mustard seeds sizzle add the mango mixture to the pan and allow it to boil and remove it from the heat. The Mango Chutney is done.







Foler Chutney/ Mixed fruit Chutney



- Apple- 1
- Grapes- ½ cup
- Sultanas- ¼ cup
- Date- ½ cup
- Ripe Mango- 1
- Sugar- ¾ cup
- Salt- 1 pinch
- Lemon juice- ½ lemon
- Fennel seeds- ¼ teaspoon


Cut the apple and the mango into small pieces. Take the seeds out of the dates and slice the dates into thin strips. Rub the fruits with lemon juice.
Now add 1 cup of water to a pan and let it boil. Pour all the fruits in the pan after the water starts boiling. Add the Fennel seeds, sugar and the salt. Cover the lid of the pan. Reduce the heat. Remove the pan once the fruits are cooked. Add rest of the lemon juice to the chutney.







Tomator Chutney/ Tomato's Chutney




- Ginger- 2.5 cm
- Cooking oil- 2 tablespoon
- Panch Foran- ½ teaspoon
- Red Chillies- 2
- Tomatoes- 450 gms
- Salt- 1 teaspoon
- Sugar- ¾ cup
- Sultanas- ¼ cup
- Dates- ¼ cup
- Turmeric powder- &frac18 teaspoon
- Lemon juice- 1 teaspoon
- Green Chillies- 2, thinly sliced




Peel and cut the ginger into very thin long strips.
Slice the dates into long strips. Heat the oil in a round bottomed pan. Add the Panchforan and the red chilli. Wait until it splutters and then add the tomato in it. Now add the turmeric powder, salt, sugar, ginger, sultanas and date pieces. Redoce the heat and cover the lid of the pan. Allow the tomatoes and the dates to cook. Once they are all cooked and it thickensa bit add the green chilli and sprinkle the lime juice over the top of the Chutney. Well, its done!!!
